White pepper ground

The fruit of Piper nigrum:  the bunches of pepper are left to ripen on the bush and is harvested only after the berries have turned green to red-ruddy in color, the outer layer is peeled off to obtain the white seed, which is then dried in the sun.

It tastes less pungent in the absence of the pepper peel removed.

Store in a cool, dry place, away from sunlight.
